Instructions

1. Sauté the Aromatics

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.


2. Cook the Meat

Add the ground beef or Italian sausage to the pot. Cook until browned and fully cooked, breaking it up with a spoon as it cooks. Drain excess fat if necessary.


3. Add Tomatoes and Broth

Stir in the crushed tomatoes, chicken or vegetable broth, tomato paste, Italian seasoning, red pepper flakes (if using), and salt and pepper. Bring the mixture to a simmer.


4. Add the Noodles

Once the soup is simmering, add the broken lasagna noodles. Cook according to package instructions, usually around 8-10 minutes, until the noodles are tender.


5. Prepare the Cheese Mixture

In a separate bowl, combine the ricotta cheese with a pinch of salt and pepper. You can also add a sprinkle of Italian seasoning for extra flavor.


6. Serve

Once the noodles are cooked, ladle the soup into bowls. Add a dollop of the ricotta mixture to each bowl and sprinkle with shredded mozzarella cheese. You can also top with fresh basil or parsley for a burst of flavor.
